SWEET SAUCE

Ingredients
- 300 ml Smiltenes Piens lactose-free heavy cream
- 210 g white sugar
- 3 tbsps water
- 1.5 tsp honey
- 1/4 tsp vanilla powder
- 1/5 tsp fleur de sel
Preparation
Put the sugar, water and honey in a saucepan and cook over a low heat. Do not stir, but occasionally move the pot in a circular motion. When the sugar has melted and is bubbling, turn the heat to medium-high and cook until the caramel is brown. Then turn up the heat and cook until the caramel is a beautiful, strong amber colour. Remove from the heat, add the heavy cream (watch out, it will spit and pop!) and stir until the caramel sauce is smooth. Leave to simmer over a medium heat for about 4 minutes. Remove from the heat, cool slightly, add the vanilla and salt. Pour into a jar and cool.
