SPICY CHEESE AND CAULIFLOWER PIZZA

Chef Kaspars Jansons of the Vincents restaurant and the Cheese Club Association offer a recipe for a Spicy cheese and cauliflower pizza with rocket salad and sun-dried tomatoes. This pizza is made without a speck of flour and with three great Smiltenes piens cheeses!
Ingredients
For the pizza base
  • 100g Smiltenes Piens cheese
  • 100g Mozarella cheese
  • 1 small head of cauliflower
  • 1 egg
  • a pinch of salt
  • a pinch of Chilli flakes
For topping
  • 50g smoked Provolone cheese
  • 50g Smiltene Piens cheese
  • 50g Mozarella cheese
  • 5 sun-dried tomatoes
  • 1 bunch rocket leaves
Preparation

Cut the head of cauliflower into pieces and boil in salted water until tender, then drain and press thoroughly with a towel. The resulting dry cauliflower is mashed with a fork. Add the grated two cheeses and the beaten egg, a dash of chilli (onion or garlic powder or some herbs may be added instead). Place the resulting mixture in a thin layer on a baking tray (I recommend placing baking paper underneath), this will prevent the base from sticking to the tray. Bake at 190° C for about 15-20 min. (depending on how thickly the base is applied). When the base starts to turn golden, add the first layer of all three cheeses and bake for another 5-7 min. Remove from the oven and put fresh lettuce and tomatoes on top, you can drizzle with tomato oil…., yum and this different pizza is ready…
