COTTAGE CHEESE DUMPLINGS

We recommend all dumpling fans to try the recipe for cottage cheese dumplings as offered by Smiltenes piens and cookbook author Signe Meirāne! Even if you're not a fan of dumplings, you should still give it a try! They are very tasty!
Ingredients
  • 150 g Smiltene's milk cottage cheese. Either whole milk or mix half and half whole milk with skimmed milk - churned through a meat grinder or drained through a sieve
  • 1 small egg
  • 40-50 g wheat flour
  • 5 g potato starch
  • 10 g Smiltene Piens sour cream
  • a little sea salt
  • 1 - 2 tbsp light brown sugar
  • some vanilla or tonka beans
  • a little cinnamon
Preparation

Mix everything into a smooth paste and set aside for 30 minutes. Bring the water to the boil and, when it is bubbling, put the dumplings in it with a small teaspoon. Boil them until they float to the top and then one more minute. While the dumplings are boiling, put the sour cream (I used Smiltene Piens 15% sour cream) in the serving bowls and the raspberry or other favourite jam in the middle. When the dumplings are ready, lift them out with a whisk, drain a little and put them on top of the jam. Serve immediately.

P.S. Choose a pot where you can boil all the dumplings at once.
