CHIA SEED BREAKFAST PUDDING

Almost everyone has heard about the health benefits of chia seeds, but not everyone knows how to use them to create something delicious and very healthy. Cookbook author Signe Meirāne, in cooperation with Smiltenes Piens, offers a recipe for PIENA SPĒKS drink and chia seed breakfast pudding. This low-calorie pudding will be rich in valuable nutrients and will give your meal an interesting texture.
Ingredients
  • 400 g Smiltenes Piens' PIENA SPĒKS drink
  • 4 tbsps chia seeds
  • vanilla seeds, if desired
  • 200 g blueberries
  • 1-2 tbsp. honey or coconut blossom sugar
  • pinch of sea salt
  • 1 tsp cornstarch
  • 1 tbsp lime or lemon juice
  • very little lavender or cardamom powder, whichever you like and which is available
  • granola and fresh blueberries for serving
Preparation

In the previous evening, mix 300 ml of PIENA SPĒKS drink with chia in a jar. Put it in the fridge for 12h, but shake the jar occasionally for the first 2 hours (I do it every 25 min) so that the chia is evenly distributed throughout the mixture (if you don’t do this, the chia will stay in one piece and we don’t need that). Immediately after you put the pudding in the fridge, put all the blueberry ingredients in a saucepan and heat over a medium flame. Cook for about 5-7 min. (stir occasionally), then remove and cool.

In the morning, add the remaining PIENA SPĒKS drink to the chia pudding and stir. Put the blueberry puree, granola, pudding and either blueberries or something else in bowls. Serve.
