APPLE DESERT
In Latvian autumns, the air itself seems to taste of apples baking in the oven. Every household boasts a unique recipe for apple pie or cake. The cookbook author Signe Meirāne also has one - Apple dessert with Smiltenes piens' sour cream.
Ingredients
- 400 g Smiltenes Piens sour cream 20%
For apples
- 800 g cleaned (but unpeeled) apples, in pieces
- 140 g light brown sugar
- 2 tsps cinnamon
- pinch of salt
For the surface
- 250 g Smiltenes Piens butter, room temperature
- 200 g light brown sugar
- 50 g almonds, walnuts, pistachios, hazelnuts, pounded in powder (added separately or all together)
- 130 g oat flour
- 1/2 tsp Cardamom powder
- pinch of salt
Preparation
The day before, put the sour cream in a sieve. Place the sieve over a bowl and place a plate or cling film over it and allow the cream to drain.
Preheat the oven to 180 degrees. Prepare a ceramic pan approximately 30 x 30 cm.
In a pan, mix everything for the apples.
Beat the butter with the sugar for 2-3 minutes. Then add the remaining ingredients and mix. Place on the apples and smooth. Bake for 45-50 minutes, one level below medium. When the top is beautifully golden, it is ready. Serve hot, warm or cold. Most importantly, add a big spoonful of drained sour cream.
