LAYERED BROWN-BREAD

This layered brown-bread recipe is a lovely greeting for Women's Day from Smiltenes Piens, the Cheese Club and the chef of the restaurant Vairāk Saules, Tomass Godiņš.
Ingredients
  • 200g "Latvijas" cheese
  • 150g rye bread
  • 100g Smiltene Piens cream cheese
  • 70g Smiltene Piens heavy cream
  • lemon zest
  • icing sugar to taste
  • cinnamon
  • cardamom
Preparation

Grate and lightly toast the rye bread, sprinkle with cinnamon and a little ground cardamom. Place the grated “Latvijas” cheese, toasted rye bread, cream cheese and whipped cream, lemon zest and icing sugar in a bowl. Mix everything. Serve with lingonberry-apple jam.
