AVOCADO COLD SOUP

Cold soup is a favourite summer dish that will beat the heat and provide the time for relaxation. One of the most convenient variations of cold soup is kefir-based soup. So, to help you keep your head cool and clear, here is a recipe for Avocado Cold Soup.
Ingredients
  • 500 ml Smiltene Piens kefir
  • 4 hard-boiled quail eggs
  • 2 ripe avocados
  • 3 tbsps lemon or lime juice
  • 2 garlic cloves
  • dill, parsley
  • kinza, if you like
  • salt to taste
  • ground black pepper
  • toasted bread
Preparation

Place the avocado flesh in a blender with the pre-cut herbs, squeezed lemon or lime juice, chopped garlic and a little salt. Blend the ingredients into a creamy paste. Add the Smiltene Piens kefir, gently blend everything. Add the chopped quail eggs, stir and refrigerate for 30 minutes. Garnish with fresh herbs and freshly ground black pepper. Serve with toasted bread.
