STRACCIATELLA CHEESE

Creamy mild, that's stracciatella cheese. The latest from Smiltenes Piens and just in time, because there's nothing easier than putting cheese on your plate and adding your favourite toppings. Tomatoes, grilled peppers, courgettes or aubergines, olives, thinly sliced cucumber, dried meat slices, truffles, radishes, steamed new potatoes, etc. This time, a recipe by cookbook author Signe Meirāne with the last of last summer's peas and jalapenos.
Ingredients
  • 1 Smiltenes Piens stracciatella cheese
  • 200 g frozen green peas
  • 5 sun-dried tomatoes in oil, cut into strips
  • 1 small jalapeno (frozen), sliced very thin
  • 2 tbsps extra virgin olive oil
  • fresh ground black pepper
  • sea salt to taste
Preparation

Bring the water to the boil, season with salt and add the peas. Boil for 3 minutes, drain and immediately add to cold water. Leave to cool and drain. Put the stracciatella cheese, peas, tomatoes, jalapenos in a bowl. Pour oil, season with salt and pepper and serve.
