RADISHES WITH BURRATA

Sometimes it takes very little to obtain so much! Smiltenes Piens burrata goes nicely not only with tomatoes, but also with many other vegetables. Radishes which are in season right now is the perfect companion. Just add a little dill, bread crumbs, smoked salt and you have a fabulous dish. Cookbook author Signe Meirāne serves Smiltenes Piens burrata prepared in this way with freshly baked natural sourdough bread, baguette or rye bread (used to scoop up whatever is left on the plate).
Ingredients
  • 15 radishes, thinly sliced
  • 4 tbsps avocado oil (extra virgin olive oil can also be used)
  • a small handful of dill leaves
  • 1 Smiltenes Piens (always take out of the fridge 30 minutes before serving)
  • 1 tbsp grated bread or breadcrumbs
  • smoked sea salt to taste
  • freshly ground black pepper to taste
Preparation

Put the radishes in a bowl, put the Smiltenes Piens burrata on top, add the oil, dill, bread, salt and pepper. You can also put it all on slice of bread, but then the burrata must be removed from the filling, the surrounding part must be chopped, everything should be mixed and put on the bread. Layer the radishes with dill, oil, salt and pepper on top.
