Mini "Mozzarella" with basil pesto, tomatoes, arugula, fennel and "Cheese crisps"
Recipe for 2 servings.
Ingredients
- Mini Mozzarella – 1 package
- Cheese crisps (various flavors)
- Yellow tomatoes - 2 pcs.
- Red tomatoes - 2 pcs.
- Fenhelis – 1 gab.
- Rukola - 125g
Ingredients for making pesto sauce
- Basil - 50g
- Olive oil – 100g
- Lemon - 1/2 pc.
- Salt, black pepper.
Preparation
Start by making the pesto sauce. Squeeze lemon juice into a blender, pour oil, add basil and blend. Put the “Mozzarella” balls in a dish, pour over the blended pesto sauce and leave to marinate.
Cut the colorful tomatoes, cut the fennel into thin slices, add the arugula, grind black pepper, mix. Serve the fresh salad in a bowl and add the marinated “Mozzarella” balls with pesto sauce.
Choose “Cheese crisps” of various flavors, squeeze the fragile – airy cheese balls and sprinkle them over the salad. A PLEASURE TO ENJOY!
