FLUFFY PANCAKES

Cookbook author Signe Meirāne and Smiltenes Piens offer a recipe that will make an autumn or winter day warmer, brighter and happier. Fluffy pancakes! They are quick and easy to make, they can be served with fruit, butter, cream, jam, chocolate sauce, maple syrup, honey or any other topping that will add a festive touch to an ordinary day.
Ingredients
  • 440 ml Smiltenes Piens kefir
  • 260 g wheat flour
  • 2 tsps baking powder
  • 1 tsp soda
  • 1/6 tsp sea salt
  • a little vanilla extract or powder
  • 1/2 bio lemon zest, finely grated
  • 1/5 tsp cardamom powder (if you want)
  • 60 ml mild oil or melted butter
  • 2 small eggs
  • 45 g honey (melt if solid)
Preparation

Put the dry ingredients in a bowl and mix. Add all the wet ingredients and mix with a hand whisk until you have a smooth batter (there may be some lumps). Heat a frying pan so that it is hot and leave on a medium flame (set at 7 out of 12 on the induction hob). Put batter on to form round pancakes and fry until golden on one side. Flip and fry until golden on the other side. Serve with berries and honey or maple syrup.
