BURRATA WITH AVOCADO CREAM
Smiltenes Piens’ Burrata with avocado cream - a new, fresh, tasty and spring-coloured recipe, created in collaboration with cookbook author Signe Meirāne.
Ingredients
- 3 ripe avocados, cleaned
- 1 garlic clove, pressed through a garlic press
- 1/2 shallot, finely grated
- 1/2 bio lemon zest, finely grated
- 1 tbsp lemon juice
- 10 ml extra virgin olive oil
- 1 Smiltenes Piens’ Burrata
- 5 radishes, thinly sliced
- 1/2 tsp black sesame
- sea salt to taste
- freshly ground black pepper, to taste
Preparation
Place the avocado, onion, garlic, zest of half a lemon, juice, salt and pepper in a bowl and press and mix well. Add the oil and stir. Place in a bowl, smoothing over at the bottom. Place the radishes, Smiltenez Piens’ Burrata, a little salt, pepper, lemon zest and black sesame seeds, if you have. Serve with freshly baked bread.
