BEANS WITH BURRATA
There are many great ways to serve Smiltenes Piens burrata, as it goes well with tomatoes and basil, toasted ciabatta bread, pizza, pasta and other classic Italian dishes. Continuing its cooperation with cookbook author Signe Meirāne, Smiltenes Ppiens offers a new recipe - white beans with our burrata.
Ingredients
- 480 g canned, drained and rinsed white beans
- 40 ml extra virgin olive oil
- 2 garlic cloves, pressed through a garlic press
- 1 bio lemon zest, finely grated
- 2 tbsps lemon juice
- 1/2 tsp harissa paste or chilli flakes, whichever is available or you prefer
- Small handful of mint
- 1 Smiltenes Piens burrata
Preparation
Pour half the oil in the pan, add the garlic, beans, salt and pepper. Heat on a low flame for about 10 minutes. You don’t need it to fry, but to heat up slowly. When warm, stir in the lemon zest and juice, harissa or chilli flakes and mint. Place in a bowl, put on the burrata, pour on the remaining oil and add more pepper. Serve. It tastes great also cold.
