SWEET POTATOES WITH CHEESE

Ingredients
  • 120g Latvijas siers cheese
  • 50g Smiltenes Piens butter
  • 100g plain yoghurt
  • 40 g olive oil
  • 2 sweet potatoes
  • 50 g salted nuts
  • 4 sprigs of thyme
  • salt
  • pepper
  • watercress
Preparation

Cut the potatoes in half, place them on a frying pan – with the cut side down – on baking paper, add oil, butter, thyme, a little salt and pepper. Bake at 175°C for about 30 minutes until soft. Place the finished potato on a plate and serve with cubed Latvijas siers cheese, yoghurt, watercress and nuts.
