RHUBARB BREAD

It's rhubarb time! Although every cook has their own rhubarb bread recipe, this is the one we recommend for Midsummer night celebrations! To make it better, choose Smiltenes piens' excellent butter, cottage cheese and sour cream.
Ingredients
For the base
  • 200g Smiltenes Piens butter
  • 265g Smiltenes Piens cottage cheese 9%
  • 4 eggs
  • 1 cup sugar
  • 2 cups flour
  • 2 tsps baking powder
  • 1 tsp potato starch
  • baking paper
For filling
  • 5-6 large rhubarb (cut into chunks)
  • 400 ml Smiltenes Piens sour cream 20%
  • 1 egg
  • 4 tbsps sugars
  • Cinnamon
Preparation

Place the soft butter in a bowl, add the sugar and beat well. Beat in the eggs, add to the butter and stir. Crush and add cottage cheese, add the baking powder and potato starch. Finally, add the flour and mix well. Spread the dough on a baking tray lined with baking paper and cover with the rhubarb. Bake at 180 °C for 50 minutes. Remove from the oven and pour over the cream beaten with the egg and sugar. Sprinkle cinnamon over the top and bake for a further 10 minutes.
