TUNA CREAM

This recipe by cookbook author Signe Meirāne and Smiltenes Piens will be just in time when you want something tasty but struggle to think of anything... This is tuna cream, a perfect part of Sunday breakfast pancakes, a weekday sandwich or a festive appetizer plate.
Ingredients
  • 150 g Smiltenes Piens cream cheese
  • 200 g canned tuna in its own juices
  • 2 tbsp lemon juice
  • a little organic lemon zest, finely grated
  • 2 tbsp extra virgin olive oil
  • sea salt to taste
  • freshly ground black pepper to taste
  • some rocket leaves or watercress
Preparation

Put the cream ingredients in a bowl and mix with a fork until creamy, but still with lumps. Garnish and serve.
