PUMPKIN CREAM SOUP

Pumpkin cream soup will be just in time for HALLOWEEN! We recommend choosing a delicious variety of pumpkin such as muscat or butternut and serving the soup in a carved pumpkin!
Ingredients
  • Two pumpkins (one will become a soup terrine, one for the soup)
  • 1 onion
  • 1 garlic clove
  • 2 carrots
  • Smiltene Piens butter
  • Smiltene Piens heavy cream
  • Roasted pumpkin seeds
  • Spices that go with pumpkin and those which you love - nutmeg, cumin, paprika powder, ginger root...
  • Five pepper blend
  • Fresh coriander and/or other herbs for garnish
Preparation

Carve the most beautiful pumpkin, which will now become the festive soup terrine. Place the onion, garlic, pumpkin and carrots, cut into large pieces, and finely chopped carrots in the oven and fry in butter. Put everything in a saucepan, add water and boil for about 30 minutes, then blend and add the spices of your choice. Add the heavy cream and cook until the first bubble. If you fancy something spicier, you can add cleaned frozen prawns and/or finely grated Granister or Smiltene cheese to the finished soup. The finished soup is poured into a carved pumpkin and garnished with coriander, roasted pumpkin seeds and freshly ground pepper.
