MUSHROOM CASSEROLE

Inspired by Smiltene Piens Mozzarella cheese and thanks to cookbook author Signe Meirāne's inexhaustible love for cooking, a very seasonal and creamy recipe has been created.
Ingredients
  • 800 g various mushrooms (chanterelles, eryngii and organic mushrooms)
  • 30 ml soft extra virgin olive oil
  • 1 tsp finely chopped rosemary
  • 200g Smiltene Piens’ Mozzarella, sliced
  • 2 garlic cloves, pressed through a garlic press
  • sea salt to taste
  • fresh ground black pepper
Preparation

Preheat the oven in grill mode. Heat the oil in a frying pan and add the mushrooms. Season with salt and rosemary and fry on a medium flame until almost done. Arrange the Mozzarella all over the pan, place in the oven and fry until the cheese starts to bubble. Remove and serve immediately (best with fresh bread).
